Protein digestion begins in the stomach where the enzyme pepsin, activated from pepsinogen by hydrochloric acid, hydrolyses proteins into shorter polypeptides. Although the mouth produces salivary amylase, this enzyme acts only on carbohydrates. Further protein digestion continues in the duodenum via pancreatic enzymes such as trypsin.
